Chefs Special Series - Vaishali Mundada

It is the beginning of the festive season and the appropriate time to talk about our plans for the upcoming occasions. The festivals are incomplete without sweets and gifts. Chocolates are a perfect choice to make your family events more memorable.

Vaishali Mundada, a Chocolatier and the owner of Cadbyz - World of Chocolates, is our guest of the Chefs Special Series this week. Let us know more about her journey and business.

1. Tell us about Cadbyz – World of Chocolates.

Chocolates!!! The word itself brings an array of feelings within us. Our brain instantly releases endorphins when we talk about chocolates. Cadbyz is all about these emotions and an expression of love, gratification and, happiness. At Cadbyz’s, we make innovative, handcrafted chocolates and customized chocolate bouquets. The best place to try out the tastiest chocolates with assorted flavors and creative shapes.

2. Where did you get the idea?

It was back in 2011, a decade ago, when my sister was teaching my daughter the art of making homemade chocolates as a fun activity. The molds, ingredients, and flavors, everything was a pleasing experience. The process of chocolate making was so appealing to watch and, the result being delicious, mouth-watering chocolates. I had decided that very moment that I wanted to become a Chocolatier.

3. When did you start Cadbyz?

I was passionately involved in learning the process of making handmade chocolates. It was no more a recipe for me. I was determined to transform it into an Art. My dedication and perseverance towards mastering the skill of chocolate making were reaching to a new extent. The gift of chocolates that I gave my friends and relatives was well appreciated. That gave me added confidence to focus more on the process. One of my friends gave me an order of 20 kgs for a family function. It was a real challenge for me, and soon my journey kicked off into this profession.

I had set up a small counter for an exhibition during Diwali in 2012. That turned out to be the best decision as people liked the chocolates and presentation. Soon I started getting orders and thus began my venture – Cadbyz.

4. What principles do you follow in your business?

Zero compromises on product quality are what I believe makes me stand out in the saturated market. I have never stopped experimenting and always come up with innovative ideas to make presentations more mesmerizing. On-time delivery and proper communication with customers have always made me stay on top of my business.

5. Tell us about the variety of chocolates that you make.

Well, the list is long, but some of them include exotic truffles like Rose n Pistachio, Brownie Chocodrip, Choco Chilli Fusion, Peanut Butter, Orange & Apricot truffles, Salted Caramel, and Coffee temptation.

6. Do you offer any courses?

Yes! Cadbyz offers a professional chocolate-making course wherein you can learn 40+ types of chocolates. Theoretical training covers properties of chocolates, different types of formal and informal wrapping techniques, presentation methods according to occasions, and basic bouquet-making techniques. You can find more details on my Facebook page.

My first blog - Divine Aromatics

"Food is the ingredient that binds us together."  With this quote, I commence my journey in food blogging. Why a food blog? That is what I had been asking myself for quite some time. Cryptocurrency, artificial intelligence, electric cars being currently discussed around the globe, to choose a food niche was a daunting task. As an Engineer and a German linguist, there were series of topics that I could have chosen. But when it comes to food, there’s a different level of dopamine released in my body. As an Indian, I consider myself lucky enough to have tried diverse dishes, and the best part is, there’s always something different to try. South Indian breakfast, North Indian meals, delicious snacks, Rajasthani cuisine, Bengali cuisine, the list can go on and on. Now the important question - Do I cook? The answer would be Yes and No. I cook on occasions whenever I come across any new recipe. Last year when I was left alone in Pune due to lockdown, there was no choice f
