The next culinarian of the Chefs Special Series is Vikrant AKA Sanjeev Inamdar.
He is a graduate in BSc Chemistry from RLS college,
Belgaum. Vikrant is a former badminton player & has represented Karnataka
University at All India level. After a long career of 36 yrs in Sales &
Marketing, he is now following his passion for cooking.
1. When did you start your cooking journey?
As a foodie, the journey subconsciously started from my childhood days when my mother cooked Maharashtrian cuisine for everyone. During my career in Sales and, Marketing, I had the opportunity to try a variety of dishes in different regions of Maharastra. It further expanded my interest in learning and understanding the intricacies of different cuisines.
Professionally I started cooking on a commercial basis in
October 2015. In January 2016, I was awarded the Star Chef of Belgaum at the
Rotary Annotsav cooking contest. It further boosted my confidence.
2. What is your motivation?
My passion for serving tasty and healthy food to customers encourages me to cook different Indian dishes. The positive feedback from clients is an added motivation that pushes me to strive for more. Sometimes a negative rating allows me to learn from my mistakes & improvise for the future.
3. Your favorite cuisine & dish?
As a food enthusiast, I have been diligently following Indian cuisine. Punjabi, Rajasthani, Andhra, Gujarati, Malnad & Chettinad region, and Lucknowi cuisine are my preferences. My favorite dish is Biryani. Having mastered the art of making Dum Biryani the authentic way, my customers call me "Biryani wale Inamdar."
4. Have you done any courses?
No, I have not undergone any courses to learn the art of cooking. My passion and love for cooking have driven me to learn from books on culinary art. More than mugging a recipe, what interests me is the intricacies of the process. However, I have done an online course on Diet & Nutrition and, I am a certified Nutritionist.
5. Tell
us about your business.
The registered brand name of my catering business is "Swaad Yatra." We serve Biryani, Kebab, Curry and, Kheema only on a Kg basis, with a minimum quantity of any dish starting from 1/2 kg - 3 kg. I plan to launch my Spice powder mixes which I use for cooking & also ready-to-cook gravies for some famous Indian dishes.
